Trippas White Group is seeking an exceptional Head Chef to lead the culinary team at Botanic House Sydney, working closely with renowned chef and restaurateur Luke Nguyen.

This is an exciting opportunity for a highly accomplished chef with a passion for Vietnamese and South East Asian cuisine to take the lead in one of Sydney’s most iconic hospitality destinations.

The Opportunity

As Head Chef, you will be responsible for leading the kitchen operation across a dynamic, multi-outlet venue, delivering outstanding food and an exceptional guest experience seven days a week.

Working alongside Luke Nguyen, you will play a key role in developing and maintaining a distinctive culinary offering that celebrates the flavours, produce and traditions of Vietnam and South East Asia, while bringing a contemporary Sydney perspective to the menu.

The role also encompasses culinary oversight of Farm Cove Eatery, ensuring consistency, quality and strong operational standards across the broader venue operation. You will also work closely with the events team to deliver exceptional food experiences across events and functions held at the venue, ranging from intimate gatherings through to large-scale events.

Key Responsibilities

  • Lead the culinary operation across Botanic House and Farm Cove Eatery
  • Work closely with Luke Nguyen on menu development, culinary direction and execution
  • Oversee food production and service across multiple outlets
  • Lead the kitchen through a 7-day operation
  • Manage and execute menus for events, functions and special occasions at the venue
  • Maintain consistently high standards across food quality, presentation, service and kitchen operations
  • Recruit, lead, mentor and develop a high-performing culinary team
  • Manage food costs, labour, stock control and kitchen budgets
  • Ensure strong compliance with food safety, hygiene and workplace standards
  • Drive innovation while maintaining consistency and commercial sustainability
  • Manage budgets, food and labour costs, and procurement to protect profitability without compromising on quality.

About You

We are looking for a proven senior chef who brings:

  • Strong expertise in Vietnamese and South East Asian cuisine
  • Previous experience as a Head Chef or senior kitchen leader in a high-volumehospitality environment
  • Experience managing multiple outlets or complex kitchen operations
  • Experience delivering food for events and functions
  • The ability to lead, inspire and develop a large culinary team
  • Strong commercial and operational understanding, including food costs, labour and kitchen controls
  • Experience working within 7-day operations
  • A passion for quality, consistency, presentation and exceptional guest experiences
  • Excellent communication, organisation and leadership skills
  • A genuine interest in contemporary Asian cuisine and a commitment to innovation
